Humans eat plants, animals, and fungus. Some we’ve decided are economically viable for agribusiness, but millions of species have dropped out of our culinary lexicon, leaving our discussion about food quite narrow in scope. We’re also largely disconnected from understanding how profound a food experience can actually be - going outside and reconnecting with the planet in a way our DNA intuitively values can be a heavy experience. Flavours, textures, sights, sounds, and smells that humans have evolved to be connected to for thousands of years - we provide an opportunity to experience this connectivity.
