Back in the early days when we were running butchery workshops with Shovel & Fork, game workshops were an impossibility as we just couldn't control when a wild big game animal would cross our paths. We some demos with lamas [crazy], but it wasn't the same.
Problem solved. We now have a deer butchery workshop led by Kevin Kossowan thanks to our sister project FoodWorkshop. We take a whole skinned carcass down to individual muscles and walk you through each step of the way. Our butchery workshops will show you how we do it, and encourage you to develop your own approach as you get more comfortable with what you prefer in the kitchen - which is what it's all about.
