Learn to forage in the world’s largest land-based biome
Rochester - our primary bush base and field kitchen - is about an hour north of Edmonton, and consistently one of our most popular walk locations. Unlike Edmonton’s introduced species like asparagus and sea buckthorn, Rochester offers foundational flavours of the boreal forest: labrador tea, morels, black currant, fiddleheads, and more.
The boreal forest stretches far and wide. This season we’re also visiting Grande Prairie and Fort McMurray to forage deeper into the North - but these trips require a minimum number of guests to make the journey viable.
On this walk, your guide will introduce you to 15-20 species of wild edible plants and fungi. We focus on practical home uses - savoury dishes, desserts, and beverages. Whether you’re new to wild food or looking to deepen your knowledge, you’ll leave with a strong base and plenty of inspiration.
Forage The Boreal
MORNING WALKS: 9 - 11:30am
AFTERNOON WALKS: 1 - 3:30pm
LOCATION - These walks take place in green spaces and crown land surrounding the listed location. Details released in the email briefing.
What To Wear & Bring - We recommend long sleeves, long pants, covered shoes, and a hat - all helpful to manage sun, bugs, and bush. Dress for the weather as we’ll be out there rain or shine. Please also bring: curiosity and questions! A notepad or phone are handy for taking notes. Please leave at home: for safety reasons we ask that no sharps be brought into the field. Your guide will have one if needed.
